		<description>I am a kosher vegan baker.  I&#039;m always pleased to hear of cook books that may be useful.  You may have saved me the $20 price of this one.  Vegan bakers have been using Earth Balance margarine for years as an excellent substitute for butter.  I&#039;m surprised it isn&#039;t available in Minnesota. Of course, I&#039;m writing from Berkeley, Ca,&quot;Gan Eden&quot; for vegans. Another tip: You usually cannot substitute oil for butter in equal amounts.  Fortunately, there is a web page that provides a quick easy table for calculating:

I can&#039;t tell from any of the reviews whether enough recipes are egg free or easily adapted using egg substitute so I&#039;m passing until I see a copy in person.
