Shiksa Eats: Cheese Pancakes

Do not let the name dissuade you. There is not actually cheese in these pancakes. Per se. Yeah, I know, it’s after Shavuot, and therefore I should be off this dairy kick. …But I’m not.
Blinztes. Cheesecakes. Rugelach.
You Jewish people really know your dairy. And I appreciate you for it.
As you might know off the top of your head, the filling for the blintzes I made a couple weeks ago was actually mainly cottage cheese along with some sweetening agents. Unfortunately for me, it didn’t use the entire tub of cottage cheese.
I loathe cottage cheese.
Every time I use it in a recipe, without fail, I give it a taste. And each time I try it, I regret that life decision. It’s just bad. I don’t know what I’m expecting, but it’s not curds of what seems to be yogurt.
Why all this talk about cottage cheese? Because it’s the key ingredient in… Cheese pancakes!

Like normal pancakes, but with cheese.


 Ingredients

  • 1 c. Cottage Cheese
  • 1 c. Flour
  • 1/2 c. Sugar
  • 3 Eggs
  • 1/4 c. Almond Milk
  • Dash of Cinnamon
  • 1 tsp. Vanilla
  • Dash of Salt
  • 2 Tbs. Canola Oil

*** The recipe called for 1 lb. Farmer’s Cheese, but I wanted to get rid of my Cottage Cheese, as I monologued earlier. I’m gonna be real with you, as for the exact conversion of lbs of Farmer’s Cheese to Cottage Cheese, I pulled the “1 c. Cottage Cheese” out of my ass. I have no idea if that is what it actually converts to, but it turned out, so long hair don’t care.

When making pancakes (or blintzes), I swear by my non-stick skillet.


Directions

  1.  In a large mixing bowl, combine the flour and sugar.
  2. Use a food processor or hand mixer to blend the eggs and cottage cheese. (I used a Magic Bullet.) Pour blended ingredients into the dry and stir.
  3. Add milk, cinnamon, vanilla, salt, and oil.
  4. Dollop batter onto skillet or frying pan. Let the pancake fry for a couple minutes or until a golden color.

This recipe made about two dozen pancakes.

If you want your pancakes fluffier, add a couple of tsp of baking soda/powder, and don’t over-mix. I love dense pancakes, so this recipe was exactly what I was aiming for.
The best thing about this recipe, though, is that you have no idea that you’re eating cottage cheese. When eliciting people to taste test these, I might have left that tiny fact out. They had no idea.
