Here are 20 ideas to start me off, but I’m going to need more help. Any of you have this dilemma? Anyone have any suggestions? Let me know in the comments!

Ugh. I left my wallet at home this morning so I couldn’t buy a bagel for breakfast. Starving in my office, I just reached into my drawer for leftover Matzah. Yes, I’m eating Matzah. On the same day I wrote this post. Cruel fate? Yes. Ironic? Yes. The joke’s on me, I guess.
We overbought. We talked about going easy on the matzah during Passover, did well and ended up with lots of extra. I think we have eater 5x more matzah now that Passover is over then we did during. Bummed. My hubby has been having huge chunks of it with oraganic (corn syrup free) jam, also bought for Passover every morning.
The only matzah I can tolerate are matzah pizza and matza brei.
Cover one sheet of matzah with pizza sauce and sprinkle on top with mozzarella cheese. Cook in microwave on high for 50-60 seconds. OK for Pesach. Probably not acceptable during the rest of the year.
You could try crushing it up into matzah meal or matzah farfel… Waaay cheaper than buying “pre-crushed,” as it were… 🙂
