Ahh… These Luscious Latkes! Whether you have Chanukah in Santa Monica, or celebrate the Festival of Lights in the frozen tundra, this latke recipe will fill the holiday with good eatin’ and fond memories. (Recipe follows below)
Easy latke recipe
2 russet potatoes peeled and grated
½ onion, grated
2 eggs, beaten with 1 tablespoon of cream
2 Tablespoons of flour
½ teaspoon of salt
½ teaspoon of baking powder
Using a slotted spoon, drop 2 heaping tablespoons of potato mixture into hot oil (350 degrees) for 3 minutes per side. Drain on wire rack and serve with sour cream and/or apple sauce. Makes approximately 12 latkes.
Extra latkes can be cooled, placed in freezer bags and kept frozen. Reheat on sheet pans in 400 degree oven until hot and bubbly.
